Ginger and Sesame Oil Chicken

Ingredients:
Chicken (with bones preferably), lots of ginger, sesame oil, soy sauce, sugar

Steps:
1. Fry shredded ginger in sesame oil. Set aside when browned.
2. Use the remaining oil to brown the chicken pieces.
3. Add a dash of say sauce, and little amount of sugar.
4. Add the ginger back in.

Ginger Shallot Prawns with Noodle




Ingredients: Fresh prawns with shell, ginger, shallot, noodle, chicken stock, Chinese cooking wine, soy sauce, sugar (optional), corn flour, oil

Steps:
1. Shell the prawns, keep the shells.
2. Lightly fry the prawn shells in some oil, add water, leave to simmer for awhile. Prawn jus to be used later.
3. Lightly coat shelled prawns with corn flour, then flash fry the prawns till they turns red but not fully cooked.
4. Heat some oil in a wok, add ginger and shallot.
5. Add noodle.
6. Add the prawn jus.
7. Add soy sauce, chicken stock, Chinese cooking wine, sugar.
8. Add the prawns.
9. Viola.

Thai Eggnet Salad with Pickled Cucumber

This is one of Long Grain's (Surry Hills Sydney) signature dishes, and is yumyum. I have made a simplified version of the dish. Masterchef's recipe is attached below.

Thai style Fried Fish with Cucumber and Coriander Salad (Barramundi and Red Snapper)


Fish:
1. Score each side of the fish 3 times to enable hot oil to penetrate the flesh more easily in the frying process.
2. Sprinkle some salt on each side of the fish.
3. Fry the fish in a wok containing at least 2-3cm of oil, depending on the size of the fish, for about 3-5 minutes at least on each side.

Dressing:
1. Mix fish sauce, brown sugar, lime zest, and lime juice together. Can mix in other Thai seasoning or herbs too according to taste, e.g. chilli, lemon grass, etc.
