Susan-style Zucchini Omelette

  1. Using the left-over zucchini guts that was cored when making the stuffed zucchini, hehe. Brown the guts in olive oil; take out and drain; leave some oil in pan, pour the guts back in; pour in egg mixture (egg, salt, pepper, oregano leaves, splash of milk); flip. Can also add flour in the mixture to make fluffy zucchini pancake.
