Thai style Fried Fish with Cucumber and Coriander Salad (Barramundi and Red Snapper)
Fish:
1. Score each side of the fish 3 times to enable hot oil to penetrate the flesh more easily in the frying process.
2. Sprinkle some salt on each side of the fish.
3. Fry the fish in a wok containing at least 2-3cm of oil, depending on the size of the fish, for about 3-5 minutes at least on each side.
Dressing:
1. Mix fish sauce, brown sugar, lime zest, and lime juice together. Can mix in other Thai seasoning or herbs too according to taste, e.g. chilli, lemon grass, etc.

Apple Pie
Ingredients (quantity depends on pie size):
1. 2 large apples (I have used Pink Lady)
2. Half a lemon's juice
3. Half cup caster sugar
4. 20g unsalted butter
5. 1 teaspoon cinnamon powder
6. Egg for egg wash
Steps:
*Preheat oven to 200 degree.
1. Peel and slice apples into thin slices. Immediately put the sliced apples into a bowl with half a lemon's juice and 1 tablespoon sugar, to avoid apple oxidizing.
2. In a pan, melt 20g butter and half a cup of sugar.
3. When the caramel turns light brown, chuck in all the apple slices and cinnamon. Done when the apples slightly soften. Cool the apple down slightly.
4. Get the pie pan ready, line with pastry. Pour in the slightly cooled apples. Cut a second pastry sheet into strips. Weave them. Fold in the side. Egg wash the top of the pastry.
5. Stick the pie in the oven, till the pastry browns. The time it takes depend on the pie size - a medium pie takes around 15-20 minutes.

Beer Battered Red Snapper, Oven-Baked Chips with Rosemary, and Garlic Mayo Sauce
Fish Batter:
Add one whisk egg to 1.5 cup self-raising flour, then add 1.5 cup cold beer. I have used Beez Neez for its honey flavor. Whisk till relatively smooth. Flavor with salt and black pepper. Chill in fridge for 30 minutes.
Deep Frying Fish:
Oil to the level to cover the depth of the fish. Only start frying when the heat of the oil enables a piece of bread to turn brown in 10 second or so.
Garlic Mayo Sauce:
Mix mayo, fresh lemon juice, salt, and minced garlic together.
Chips:
3 or 4 desiree potato, cut into approx. 1cm thickness. Coat with approx 1-2 tablespoons of olive oil, 2 tablespoons of rosemary. Add some salt. Stick into approx 190C pre-heated oven. Takes about 30-40 minutes.
