Speedy Curry Prawns







Speedy curry prawn. This dish can be done under 10 minutes.

Ingredients: Prawns, Onion, Shallot (optional), Vermicelli, curry powder, coconut milk (optional, can use normal milk plus water)

Steps:
1. Brown the onion, then chuck in the shallot
2. Soak the vermicelli (vermicelli usually comes dry)
3. Chuck in the prawns, fry till they turn red/pink
4. Add in coconut milk/normal milk/water, and curry powder.
5. Adjust to taste with anything you want, brown sugar, oyster sauce, soy sauce etc. Not very authentic, but speed up the cooking and add taste speedily.
6. Throw in the vermicelli.

Notes:
- Garlic, use lots of garlic in the walnut mix and chicken.
- For coating, dip in flour, then egg, then bread crumb.
- Frying might takes awhile, to let it cook through. Oil temperature shouldn't be very high, otherwise the outside will be burnt before the inside is cooked through.

Jemput Pisang (Malaysian style Deep Fried Mashed Banana Fritter)



Ingredients:
1. 2 gigantic over ripe banana
2. 1 cup flour
3. 0.5 cup sugar
4. 1 teaspoon baking powder
5. 1 teaspoon vanilla essence
6. Pinch of salt
7. Oil for deep fry

Steps:
1. Mash banana
2. Mix all ingredients in
3. Deep fry in medium hot oil till turn golden brown

Time needed:
- Takes about 5 minutes to mix everything together. Frying take awhile if multiple batches need to be made, or if the frying container is too small. Took me about 20 minutes to do this batch.

Notes:
- Amount of sugar can vary depending on taste and sweetness of banana used
- Amount of flour can vary depending on how floury/mushy you want the inside of the fritters to be. For 2 large banana, 1.5 cup of flour will make a floury batch.
- Add a dash of oil in the mixture helps the fritters to not absorb too much oil while frying
- Can use different kind of sugar (e.g. brown sugar, honey, etc) might change the taste slightly
- Can try use half plain flour, half rice flour. I read that rice flour helps with crispiness, haven't yet tried
- Don't over mash banana, some banana lumps in the mixture makes the fritters yummier
- Don't fry in over heated oil, the outside will burn before the inside is cooked
- As long as the mixture is not too liquid, it will fry.
- Use 2 spoons to scoop the mixture into the oil
