Fried Rice, Sweet Sour Chicken, Fried Barramundi, Oven-baked Chicken Wings


Ingredients: Left-over rice, eggs, shallot, Chinese sausage, frozen vegie
Time needed: 10 min
Steps:
1. Heat some oil, add shallot, then Chinese sausage. Push to one side of the wok.
2. Add egg mixture (egg flavored with salt, white pepper, etc). Stir through egg.
3. When a soft layer is formed at the bottom of the egg omelette, add rice. Mix through.
4. Add vegie.
5. Flavor to taste, with e.g. soy sauce, salt, pepper, etc.


Ingredients: Chicken pieces, corn flour, egg, ketchup, white sugar, garlic
Time needed: 20 min
Steps:
1. Coat chicken pieces with eggs, then corn flour.
2. Fry the coated chicken pieces in hot oil. Set aside.
3. Fry some minced garlic in minimal oil. Add ketchup then sugar and water. Adjust to taste.
4. Return the fried chicken pieces to the sauce to coat.

Ingredients: Chicken wings, sweet soy sauce, soy sauce, honey, paprika powder, cayenne powder, garlic powder, onion powder, chicken stock powder, sesame oil, oyster sauce, white pepper.

Time needed: approx 30 min in the oven, depends on size and quantity of wings.

Steps:
1. Marinate the wings with whatever you fancy. If there is too much honey, wings will burn more easily.
2. Preheat oven to 180 degree.
3. Arrange marinated (I only marinate for 20 minutes. More commonly people marinate wings overnight) wings on foiled oven tray.
4. Turn each wings over half way through, then continue baking. Also take out the wing tips, due to their smaller sizes, less cooking time is needed.
