Braised Meat Balls, Braised Chicken Wings, Cabbage and Meatball Soup (红烧狮子头,红烧鸡翅,大白菜猪肉丸子汤)

Braised Meat Balls(红烧狮子头)aka Braised "lion head" is made out of minced pork. There are many different ways of making it, just like spaghetti meatballs, probably have hundreds of ways of making them. This is my version:

Ingredients: Minced Pork, fresh lotus root, egg, soy sauce, oyster sauce, white pepper, Chinese cooking wine, salt, corn flour, ginger, shallot, garlic, sesame oil, sugar.

Steps:
1. Mix 50% minced pork with 50% finely chopped fresh lotus root. Mix in little amount of salt, corn flour, ginger, shallot, garlic, sesame oil, soy sauce. The consistency of the mixture should not be too watery, otherwise the shape might not hold while frying.
2. Make the mixture into ball shape.
3. Deep fry in very hot oil. Very hot oil can help maintain the ball shape. When the color of the skin turned a light shade of golden, take them out. At this stage, the meatballs might be only half-cooked.
4. In a pot, add little oil, return the balls to the pot, add some water (or stock) to cover the meatballs, then soy sauce, sugar, oyster sauce, cooking wine. Let it simmer till the water level is low.
5. Mix in corn flour+water mixture to thicken the sauce. Serve.

Beef and Chinese Broccoli in Oyster Sauce (蚝油芥兰牛肉)



Ingredients:
Beef, Chinese broccoli, ginger, shallot, garlic, Chinese cooking wine, oyster sauce, corn flour, sugar, white pepper, sesame oil

Steps:
1. Marinate beef slices with Chinese cooking wine, oyster sauce, sugar, grated ginger, minced garlic, white pepper, sesame oil for 30 minutes.
2. Fry marinated beef in little bit of oil till 50% cooked. Set aside.
3. Fry shallot, ginger, garlic. Add the beef back into the wok.
4. Blanch cut vegie in lightly salted boiling water. Strain and straight into the wok.
4. Add oyster sauce+water+sugar+corn flour mixture. Stir. Done.

Churros

Slight modification: Instead of putting one egg plus two egg york, I put 3 eggs instead since my batter turned out to be quite dry.

Notes: I didn't have a piping bag handy, hence I hand roll the batter into long thin strip and fry them.

红烧,又见红烧~ (Braised Pork, Chicken, Vegie)


Ingredients for HongShao anything:
Any meat, sugar, ginger, shallot, garlic, star anise, soy sauce, dark soy sauce

Steps:
1. Heat up one tablespoon of oil with five or six tablespoon of white sugar. Stir constantly on low fire, till sugar caramelised.
2. Quickly toss in the meat. Coat each pieces of meat well with caramelised sugar.
3. Add hot water enough to cover the meat.
4. Toss in ginger, shallot, garlic, star anise, soy sauce, dark soy sauce.
5. Turn to low heat, cover. Might take up to an hour or more, depends on what you cook.
6. When nearly done, uncover, turn to high heat for a little while. This will thicken the sauce and give it a glossy shine.
Hongshao vegie.
- When the meat dish is simmering and cooking, scoop up some broth and use it to flavour the vegie dish, add vermicelli towards the end. Thicken with corn flour and water mixture.

Thai Pork Salad

Ingredients:
Pork belly, herbs (e.g. coriander, mint, etc.), onion, lemon/lime juice, cucumber, belacan
Steps:
1. Cook pork belly by boiling. Slice into thin pieces.
2. Toast some belacan on pan.
3. Mince and mix belacan with lemon/lime juice.
4. Slice the cucumber and onion thinly, pick the herbs leaves.
5. Mix everything together, with hand ideally.

Stirfry bokchoy with garlic and oyster sauce
Cinammon and sugar puff pastry dessert
- Good way to use up any leftover weird shaped puff pastry. Seal sides with fork.

Beef Wellington




Ingredients:
Good piece of beef, pate, puff pastry, fresh mushroom, vegie, butter, egg (optional)

Steps:
1. Seal steak in oil and butter in a pan, till about half cooked. Cool it down.
2. Wrap steak, pate, and mushroom in puff pastry. Seal it. Egg wash if you want to.
3. Put the wrapped pastry in oven at about 180 degree till pastry puff.
4. In a pot of boiling water, add some salt, chuck in the cut vegie.
5. Serve beef wellington, with vegie on the side, with some butter on the vegie.

干烧牛柳丝 (Shredded Beef in Sweet Sour Sauce)


刀工不够好,所以丝不成丝,呵呵。

Ingredients: Beef, corn flour, white sesame seeds, onion, green capsicum, salt, black pepper, white pepper, Chinese cooking wine, egg, soy sauce, oyster sauce, ketchup, sugar, honey.

Steps:
1. Cut beef into strips, coat with some Chinese cooking wine, corn flour (to soften beef).
2. Coat beef strips with egg, then coat with corn flour, straight into hot oil to fry.
3. In another wok, fry some sliced onion and capsicum, till soften. Add ketchup, sugar, salt, pepper, soy sauce, oyster sauce, honey, etc. Adjust to taste.
4. Return fried beef into the sauce mixture, stir so that all beef strips are coated evenly.
5. Serve on plate, sprinkle with white sesame seeds.

Lebanese Sausage Wrap with Tabouleh and Garlic Cucumber Yoghurt

Ingredients: Lebanese sausage, lebanese bread, continental parsley, tomato, lemon, salt, brown onion, thick Greek yoghurt, cucumber garlic.

Time needed: 20 min. If you can chop things into little pieces faster, then it will probably only take you 5 min.

Steps:
1. For tabouleh, chop tomato, parley, onion into small pieces, mix with lemon juice and olive oil.
2. For yoghurt mixture, mix minced garlic and diced cucumber pieces with thick Greek yoghurt, add olive oil, salt and lemon juice.
3. Cook the sausage.
4. Start to assemble sausages, tabouleh, and yoghurt mixture on Lebanese bread. Wrap it up in tube shape. Though not traditional, adding bbq sauce makes the wrap tastes slightly different, in an interesting and yummy way.

Wombok, Minced Pork balls, and Vermicelli Soup (大白菜猪肉丸子粉丝汤)



Ingredients: Minced pork, wombok (Chinese cabbage), Vermicelli, corn flour, shallot, sesame oil, salt, white pepper, chicken stock, soy sauce.

Time needed: 10 min prep time, 50 min cook time.

Steps:
1. Boil the cut Chinese cabbage till soften.
2. To make pork balls, add corn flour, chopped shallot, salt, white pepper, chicken stock, a dash of sesame oil, a dash of soy sauce to minced pork. Mix through thoroughly using hand. Roll into ball shape, drop into soup when cabbage has softened.
3. Adjust to taste by adding salt, a dash of soy sauce (not too much, otherwise soup will darken), stock, etc.
4. Add vermicelli.

Fried Rice, Sweet Sour Chicken, Fried Barramundi, Oven-baked Chicken Wings


Ingredients: Left-over rice, eggs, shallot, Chinese sausage, frozen vegie
Time needed: 10 min
Steps:
1. Heat some oil, add shallot, then Chinese sausage. Push to one side of the wok.
2. Add egg mixture (egg flavored with salt, white pepper, etc). Stir through egg.
3. When a soft layer is formed at the bottom of the egg omelette, add rice. Mix through.
4. Add vegie.
5. Flavor to taste, with e.g. soy sauce, salt, pepper, etc.


Ingredients: Chicken pieces, corn flour, egg, ketchup, white sugar, garlic
Time needed: 20 min
Steps:
1. Coat chicken pieces with eggs, then corn flour.
2. Fry the coated chicken pieces in hot oil. Set aside.
3. Fry some minced garlic in minimal oil. Add ketchup then sugar and water. Adjust to taste.
4. Return the fried chicken pieces to the sauce to coat.

Ingredients: Chicken wings, sweet soy sauce, soy sauce, honey, paprika powder, cayenne powder, garlic powder, onion powder, chicken stock powder, sesame oil, oyster sauce, white pepper.

Time needed: approx 30 min in the oven, depends on size and quantity of wings.

Steps:
1. Marinate the wings with whatever you fancy. If there is too much honey, wings will burn more easily.
2. Preheat oven to 180 degree.
3. Arrange marinated (I only marinate for 20 minutes. More commonly people marinate wings overnight) wings on foiled oven tray.
4. Turn each wings over half way through, then continue baking. Also take out the wing tips, due to their smaller sizes, less cooking time is needed.

Cumin Cauliflower

Ingredients:
Cauliflower, cumin seeds, sesame oil, smoked paprika powder, cayenne powder, salt.

Steps:
1. Fry cumin seeds in sesame oil.
2. Add cauliflower.
3. Add smoked paprika powder, cayenne powder, salt.
4. Add little bit of water, leave to cook till cauliflower softens.

Ginger and Sesame Oil Chicken

Ingredients:
Chicken (with bones preferably), lots of ginger, sesame oil, soy sauce, sugar

Steps:
1. Fry shredded ginger in sesame oil. Set aside when browned.
2. Use the remaining oil to brown the chicken pieces.
3. Add a dash of say sauce, and little amount of sugar.
4. Add the ginger back in.

Ginger Shallot Prawns with Noodle




Ingredients: Fresh prawns with shell, ginger, shallot, noodle, chicken stock, Chinese cooking wine, soy sauce, sugar (optional), corn flour, oil

Steps:
1. Shell the prawns, keep the shells.
2. Lightly fry the prawn shells in some oil, add water, leave to simmer for awhile. Prawn jus to be used later.
3. Lightly coat shelled prawns with corn flour, then flash fry the prawns till they turns red but not fully cooked.
4. Heat some oil in a wok, add ginger and shallot.
5. Add noodle.
6. Add the prawn jus.
7. Add soy sauce, chicken stock, Chinese cooking wine, sugar.
8. Add the prawns.
9. Viola.
